Purpose of Job
The Executive Chef is responsible for leading, coaching, motivating and overseeing all staff and aspects of the Food & Beverage departmental operations pertaining to the back of house on a daily basis.
The Executive Chef is responsible for monitoring the back of house departmental budgets in conjunction with the Director of Non-Gaming Operations and ensure that prudent decisions are made in order ensure operational efficiencies. The work is typified as a full time hands-on Manager and includes establishing priorities, developing plans, and ensuring work quality is maintained by Team Members. The Executive Chef is required to take all necessary precautions to protect the safety and health of Team Members and ensure that safe work practices are developed and adhered to. Supervision is a large part of the duties of this position and The Executive Chef is required to coordinate the activities of Team Members doing various tasks within the department. Responsibilities include scheduling, training, ongoing Team Member development, performance management and appraisal, establishing work standards and monitoring performance. In consultation with the Director of Hospitality Operations and Human Resources, the incumbent is responsible for recruitment and issuing discipline within established guidelines.

Primary Responsibilities
• Reports to the Director of Hospitality Operations
• Participate with the Director of Hospitality Operations in the development of departmental annual budgets
• Monitor culinary budgets and control expenditures related to labour, food costs and other operational costs
• Approves all departmental invoices & approvals on month end inventories
• Responsible for providing all month end documents to finance by established deadlines
• Develop and implement creative menu items for the various foodservice outlets working within prescribed food cost percentage allotments
• Liaise with the Marketing department regarding promotions for the food & beverage department.
• Plan and conduct pre-shift and monthly staff meetings
• Attend meetings and training programs when required
• Menu costing and inventory information is maintained current and accurate
• Maintain all back of house inventory control levels to meet business volumes through sound purchasing techniques
• Ensure POS - menu costing, and inventory information is current and accurate

• Develop, implement or modify (existing) department standards, policies and procedures where required
• Monitor Team Members position objectives along with encouraging Team Member development
• Complete and conduct performance appraisals for direct reports, ensures all performance appraisals are conducted within allotted timelines
• Participate in recruitment process for Culinary Team Members
• Participate in recruitment process for kitchen employees
• Conduct remedial/ disciplinary discussions in accordance with established policies and related documentation
• Resolve department issues, providing guidance and direction to employees to ensure a positive morale and motivation of all employees is sustained at all times
• Develop effective and efficient Team Members schedules to meet the requirements of business fluctuations, company and Team Members needs
• Ensure all Casino New Brunswick policies and procedures are understood and adhered to by all BOH department employees in consultation with the Director pf Non-Gaming Operations, develop, promote and participate in training programs for department Team Members
• The incumbent is responsible for collecting, maintaining, storing and securing Team Members field files Ensure all NBLGC, casino and other provincial or federally mandated laws, policies and procedures are stringently enforced at all times
• Develop and maintain positive relationships with all food and beverage staff and guests alike
• Form connections with external organizations, businesses and other jurisdictions where required
• Maintain a visible presence to guests and Team Members, model effective approaches and communication in the area of guests and Team Member relations
• Work collaboratively with the Director of Non-Gaming Operations to ensure consistency and standardization of department requirements
• Communicate to the Director of Non-Gaming Operations any Team Members or guest issues that may require assistance to remedy
• Maintain contact with suppliers and vendors on an "as needed" basis
• Communicate events of the shift in which you are supervising via the back of house log located on the Food & Beverage departmental shared drive
• The incumbent is exposed to constant noise and cleaning/ chemical substances used in the workplace.
• The incumbent carries a cellular phone issued by Casino New Brunswick, and is available by phone and/or in person in case of an emergency during and after shift.
• The incumbent will need to be flexible in altering shift work to meet event and operational demands.
• Typical stressful conditions involved in this position include maintaining daily control over all aspects of back of house operations including receiving department and working with demanding guests
• Work in compliance with the provisions of the Occupational Health & Safety Act (OHSA), regulations and internal health and safety policies and procedures including any departmental policies
• Use and wear the equipment, protective devices or clothing required by Casino New Brunswick; must always report to work in a clean uniform
• Maintain proper hygiene and grooming at all times
• Other duties as assigned

Working Conditions
• Work within a 24/7 operation with ability to work flexible hours when required (days, evening, nights, weekends and holidays)
• Willing to submit to a criminal record check with results acceptable to our organization, standards and position
• Must have employment eligibility in Canada
• Must be 19 years of age or older
• This position involves frequent standing and walking.
• Requires lengthy periods of concentration and analysis when developing reports, preparing schedules and correspondence and assessing management and operational requirements.
• May require lifting approximately 50 lbs.

Knowledge and Skills Required
• The skill requirements for this position include guest service, teamwork and cooperation, communication, self-development and initiative, valuing diversity, integrity and building trust, achieving quality results, technical/professional knowledge. These competencies are deemed important for the success of the position and Casino New Brunswick food service operations
• A Red Seal certificate is an asset and/or 7 - 10 years experience in a management capacity of a large volume foodservice operation.
• A Post-Secondary education is required.
• Training in Outlook and Microsoft Office (Word and Excel) is required.
• The incumbent will have progressive experience in a Chef / Kitchen Management position with practical hands on knowledge and experience in all facets of the Food & Beverage operations
• Specific Casino Food and Beverage operational experience would be an asset with emphasis on menu design, inventory control, food cost practices and procedures, and purchasing.
• Additionally, high volume banquet plated and buffet service and hotel restaurant service would be required experience.
• Excellent interpersonal and communication skills are required in order to promote; maintain and deliver impeccable service standards at all times.
• Proven experience in leading, motivating
